Coconut Popcorn

Yesterday I was served this delicious popcorn at my child’s school.

The coconut butter and oil used in this recipe is packed full of lauric acid that boosts immunity and destroys harmful bacteria and viruses.  Because of this medicinal property coconut butter and oil aids in digestion, destroying microorganisms that cause indigestion.

Don’t be fooled by the fat content of coconut, the saturated fat is not bad for you.  It is medium-chain and does not get stored in the body as fat.  The fat in coconut is instead used by the body for energy!  Of course everything in moderation, weight gain can happen if you eat too much of anything (more energy than your body needs).

Here’s the recipe.

1/2 cup of kernels

1/8 cup of butter

Sea salt

2 tbsp coconut oil to pop corn in

2 tbsp coconut butter

Pop the corn in about two generous tablespoons of coconut oil, heat the oil first but do not let it smoke.

Place the popped corn in a container for mixing.

Heat the butter and coconut butter together in a small pot, mix thoroughly.

Pour melted mixture over popcorn and sprinkle with sea salt.  Cover the container and shake well.
